C’mon, they help prevent cancer!

My CSA share never fails to include at least 3-4 beets each week. Unfortunately they take a lot more time and effort to prepare than any of the other vegetables, so my roommates and I just let them pile up in bottom of our fridge. Tonight I cooked them all at once, hoping that would encourage us to eat them over the next few days. No takers so far… Looks like I’ll be crying pink tears this week.
Anyone have any good recipes?
I had some really delicious beet and goat cheese and arugula fettucini at a schmancy restaurant recently. Mercy.
Good call. Beets and goat cheese are one of those amazing food combinations that makes you wonder who first to decided to try pairing them.
This morning I experimented with a beet smoothie. Not bad!
I was totally going to say the beets and goat cheese combo – but I should also note that beets and feta make an excellent pair as well. I’m sure other tangy cheeses work well too! And in terms of how to use the combo, I’ve done salads (the obvious), pasta, quiches/tarts, and bruschetta.
Brett’s also made a beet risotto that was shockingly pink but really pretty good.
I’d love to have more beets in our CSA box! We’re currently drowning in okra, so if you have any suggestions for that …
